The Juice HACCP Training Curriculum was developed by the Juice HACCP Alliance which was formed through the voluntary participation of industry, government, and academic members interested in guiding the juice industry to the higher level of food safety assurance provided by HACCP. The group was coordinated through the efforts of the National Center for Food Safety and Technology (NCFST), at Illinois Institute of Technology (IIT), with the support of the Food and Drug Administration (FDA). This manual emphasizes certain basic concepts in HACCP. HACCP is a food safety program that operates in an environment of properly implemented prerequisite programs that are properly monitored and documented. Corrections are made when necessary.
