Adulteration has become an effective although illegal method for food companies and food ingredient suppliers to improve the bottom line, sometimes with a complete disregard for the safety of the food as in the case where allergens have been used improve the margin of the product.  Here at IIT we use a combination of targeted and non-targeted analysis using advanced analytical technology to investigate the adulteration of a variety of food produces.
