The Center for Nutrition Research studies how foods, food components, and extracts, including food matrix and processing influence risk for and management of diabetes. Expertise in metabolic (dys)function focused on insulin resistance, inflammation, lipid and lipoprotein metabolism among other relevant risks factors allow for a comprehensive evaluation and understanding of dietary constituents on modern day health issues.
